Triple Chocolate Brownies
Ingredients:
175g of dark chocolate
115g of butter
1 ½ cups of brown sugar
3 medium eggs
¼ cups of cocoa powder
pinch of salt
½ cup + 2 tbsp plain flour
100g mix of dark, milk and white chocolate chips
Method:
Preheat the oven to 180C/gas mark 4.
Line an 8inch square baking tin with baking paper.
In a heat proof bowl melt the dark chocolate with butter, leave to cool for a few minutes.
Add the brown sugar to the melted chocolate and whisk thoroughly.
This should help the mixture cool to a further extent.
Add the three eggs, 1 egg at a time beating each time in-between.
Mix in cocoa powder and pinch of salt to the mixture.
Change from a whisk to a spatula and fold in the plain flour.
Once all the flour is folded in, fold in the triple chocolate chips.
Pour the mixture into the lined baking tin and bake for 35 – 40 minutes to achieve the fundamental fudginess.
Once cooled cut into 16 bite size squares
