Vanilla Sponge Cake
Ingredients:
150g butter, at room temperature
150g caster sugar
3 eggs
150g self-rising flour
2 teaspoons vanilla extract
Method:
Preheat oven at 180C/Gas mark 4.
G
rease and line two 8" tins.
Mix butter and sugar until combined well.
Crack the eggs in the mixture.
S
ift the flour and beat the mixture together until light and fluffy.
Add vanilla extract and give one last stir of the mixture.
D
istribute the mixture equally between the two tins
Place in the oven for 30 - 40 minutes.
Allow to cool.
Use pre rolled coloured icing to form the union jack on the round cake.
